The Magic Boat and Other Chinese Folk Stories by M. A. Jagendorf and Virginia Weng: This volume contains Chinese tales divided by ethnicity. Virginia Weng has written an educational introduction as well. There are a few illustrations and the text is appropriate for middle schoolers and up, but the stories could be read to children of all ages.
